WINTER BREAK IS IN THREE DAYS. YATTA!

With eight finals back to back, stress eating is real. I’ve consumed chips and cookies and crackers and alll the candy. Plus coffee. Lots of coffee.

Finals week makes you a little crazed so sometimes you need something to feel like a proper human. Perhaps a little refined. Say with a fancy tart?

This is easy to make, perfect for a savory snack and would be great as a holiday party appetizer!

Asparagus Tart
1 frozen puff pastry sheet, thawed but cold*
1.5 cups of sharp white cheddar cheese, grated
Bunch of asparagus, trimmed and halved
Salt and pepper
White truffle oil (optional)

Preheat oven to 400 degrees F.  Line a baking sheet (or baking pan) with parchment paper.

Unfold puff pastry sheet onto parchment sheet. Flatten gently with fingers. Sprinkle grated cheese. Press asparagus into cheese. Sprinkle with salt and pepper.

Bake for 20 to 25 minutes, until puff pastry is golden and asparagus is cooked through.  Drizzle with truffle oil before serving.

* To thaw the puff pastry, leave out for 45 minutes before use or in the refrigerator overnight.
